Tom Collins Cocktail

Have you seen Tom Collins? In 1874 it seemed that everyone in America was looking for him. A man would approach a friend and say Tom Collins is down at such-and-such bar talking about you. The person would walk in the bar and ask for Tom Collins, only to find out he just left for another bar. Again and again the man would just miss Tom Collins, sometimes only by seconds. Meanwhile the person's friends would sit around and laugh.

Even in the days before the Internet it was possible to have a lot of fun with misinformation. It didn't take long for bartenders to develop a real answer to the Tom Collins question though.

The perfect summer sipper, Tom Collins is a refreshing gin based drink designed to take the worry off the quixotic hunt. And remember, he is still out there talking about you.

2 ounces gin
1 ounce lemon juice
1 teaspoon of simple syrup
2-3 ounces of Club soda
Garnish with orange or maraschino cherry

- Mix gin, lemon juice and syrup with ice and shake
- Pour into Collins glass filled with ice
- Add club soda and garnish
